Two brothers inherited this 300 year old brewery but have pushed it to making modern, bursting sake, using only local rice, water and yeast. Look for ripe banana, fennel and a lengthy almond finish.  

Ideal in a white wine glass, cool. Pair with braises and stews as the candied fennel notes will act as a garnish.

The brewery once made much higher volume but as the local preference and availability changed, so did the brewery. Instead of high volume, now they focus on high quality. This is the first sake they have exported outside Japan.
