The label features a motif of the Kamoshika or Japanese serow, a special natural treasure roaming the brewery’s premises. If you look closely, you will see the serow is depicted with the kanji 津南. The rice is grown at 300 meters with a large diurnal shift giving it lots of character. Brewed only in the winter, in one of the snowiest places on earth. The abundant snowfall purifies the air by capturing dust particles, while maintaining consistently low temperatures and humidity, creating ideal conditions to control microorganisms even with the ultra-soft water. The aroma is strategic, calm but full in the pursuit of natural harmony. A bit of brewer’s alcohol unlocks potential.

Quite versatile, it’s nice served cool but also at room temperature. Pottery will bring out a different depth.
