We’ve been searching for years to find a high quality sparkling sake. The category seems to be either cheaply made and too sweet or dry and lacking flavor. Here though, we have Tokushima grown rice and a house yeast to give us both savory and fruity character.

Bubbles can always start your evening of course but this has the versatility to pair with the entire meal.
Brewery
This tiny brewery hidden in the mountains of Tokushima is in the 17th generation family house. While the region is steeped in tradition of Awa dancers and samurai, Mamiya san and his three daughters cultivate their own style of sake. They use local rice, much of it ungraded and a house yeast for a unique taste. Check out their many music collaborations.
